TOTOCORDE is our signature label in the Alta Langa DOCG appellation.
It comes from a classic blend of Pinot Nero and Chardonnay produced according
to the most artisanal bottle fermentation.
Its high quality character derives from an exceptionally sunny exposed vineyard,
a centenary skill in sparkling wines production and a long fermentation on its
yeasts for at least 48 months in our cool and dark historical cellars.
A minute dosage of liqueur d’expedition is added to perfect a well balanced brut.

Vinification
The cuvée is made in late winter time by combining the different wines - for
the Millésimé TOTO CORDE, all coming from the same harvest. The first fermentation
takes place in steel vats for nearly three weeks.
At the end of this period, the wine is chilled down to allow sediments to settle.
Foaming takes place in piled bottles and ends after aging in a fresh and dark
place for more than 36 months. During this long period special, valuable characters
develop and unveil.
The remuage and dégorgement processes are done in a conventional manner on wooden
A-shaped racks (the so-called pupitres) with frozen disgorgement (dégorgement
à la glace).
Character / Tasting Notes
Very wide aromatic spectrum tending towards hints of candied citrus fruits. Mouthfeel
is very rich in matter and volume, with notes of apricot and raisins. Thanks to
its low sugar content, this sparkling brut is a definitely rigorous, balanced
wine.
